Marinade for fish
1 lrg can of tomatoes (mashed)
1 can tomato paste
1tbsp cumin
1tbsp coriander
1tbsp fennel
1tbsp garam masala
1tsp chili powder
1tsp lemon juice
1tsp vinegar
1tbsp ginger
1tbsp garlic
1tbsp salt
Pinch of sugar


Garnish
Coriander leaves-chopped very fine
green onions-chopped very fine
3 green chili-chopped very fine

Other Layers
6 potatoes cut into wedges and half cooked
4 onions-thinly sliced and fried
2 cups lentils-boil with 1 stick of cinnamon and 1 cardamon

Rice
1pcs cinnamon sticks
2 bay leaves
2 cloves
1 cardamon
pinch of saffron

FISH
Mix all the marinade ingredients and marinate the fish overnight. Bake at 400º for 1/2-3/4 hour.

RICE
Boil 6 cups Uncle Bens rice with lots of water and the other ingredients listed.

LAYERING

First layer is rice then alternate the other layers ending with rice on top. Sprinkle the garnish on top then steam in the oven for 1-1 1/2 hurs with one cup of water. Melt 1/2lb of butter and pour on top.
