Ingredients:
Ingredients:
2 C sugar
1/4 C cocoa powder
1/2 tsp salt
2/3 C half & half
1 Tbsp corn syrup
3 Tbsp butter
2 tsp vanilla

Directions:
Directions:
Combine all ingredients except butter & vanilla.
In a small saucepan combine the sugar, creamer, cocoa, salt & corn syrup.
Mix well & bring to a boil over med-low heat.
While the fudge is cooking, butter a plate or baking dish.
Heat until the mixture reaches 240º on a candy thermometer. (don't stir during this process)
Once temperature is reached immediately remove pan from the heat.
Place the butter & vanilla on top of the mixture and allow it to cool (do not mix or disturb the pan).
Let it cool about 20 mins, until the side of the pan is warm, but not hot to the touch.
Using a hand mixer on med-low, beat the fudge for about 1-3 mins, or until it just begins to firm up & lose its shine.
Once the fudge changes texture immediately pour it into a dish to set. (work quickly)
Allow to cool 20 mins, or until set.
Cut into squares & store.
This recipe does not double well. Make one batch at a time.
