1 pound boneless chicken, cut into 1" pieces
2 zucchini, sliced
2 red peppers, chopped into chunks
1 broccoli crown, broken into florets
1/2 onion, sliced
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
2 tablespoons cajun seasoning
1/4 cup chicken broth
1/2 teaspoon red chili pepper flakes

In a large bowl, add the chicken bites, and season with salt and pepper. Add olive oil and cajun seasoning, and toss until coated.

Heat a large skillet over medium heat with 1 tablespoon olive oil. Add seasoned chicken bites, and cook for 5 to 7 minutes until the chicken is cooked through. Remove to a plate, and set aside.

In the same skillet, stir fry the onion for 2 minutes. Then add broccoli, zucchini, and peppers. Season with cajun seasoning, and cook on medium until the vegetables are crisp tender.

Deglaze with chicken stock. Then add the cooked chicken back to the skillet, and mix to combine. Garnish with red pepper flakes.
