4 boneless pork chops, pounded to 1/4" thickness
1 1/2 tsp coarse salt
1/2 tsp black pepper
1/4 C AP flour
2 eggs, beaten
3/4 C panko
1 tsp garlic powder
1/2 tsp chili powder
1/2 tsp ground coriander
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp oregano
Oil for frying

Directions:
Directions:
Season chops with salt & pepper on both sides.
Prepare 3 bowls - 1 with flour, 1 with eggs & 1 with panko.
Add spices to the panko.
Heat oil in heavy skillet over med heat.
Dredge cutlets in flour, then egg, then panko.
Sauté in hot oil for 3-4 mins per side.
Internal temp should be 145º.
Transfer to a paper towel lined plate to drain before serving.
