Ingredients:  
Preheat to 350º. Grease 12-cup pan, or use papers.

2c flour
1¼ c sugar
2 tsp baking soda
2 tsp cinnamon
¼ tsp salt
1 c ea, shred carrots, zucchini
½ c raisins (opt)
½ c walnuts or pecans
½ c coconut
½ c shredded apple
¼ c flaxseed (opt)
3 eggs
1 c oil or butter
2 tsp vanilla

Directions:
Directions:
Mix flour, sugar, soda, cinnamon, salt.
Whisk eggs, oil, vanilla separately.
Combine remainder w dry ingredients.
Pour in wet, & stir to moisten.
Scoop into cups (fill - these don’t rise).
Bake 20-25 min.
