Ingredients:  
2-3 lbs. boneless chuck roast (or London broil)
1 lg. onion, sliced in rings
1 can cream of celery soup
1 can (10 oz.) beef consomme or broth
1 envelope of Lipton Onion Soup mix
1-2 tsp. thyme leaves
1/4 c. A1 Steak Sauce
1-2 large garlic cloves, minced
8 oz. pkg. sliced mushrooms
sea salt & pepper

Directions:
Directions:
Place sliced onion rings in bottom of crockpot. Liberally salt & pepper both sides of chuck roast and place on top of onions with the fattier side up. Dump pkg. of mushrooms over roast. In a small bowl mix together celery soup, consomme, thyme, steak sauce, and garlic. Pour over top of roast. Place lid on crockpot and turn on low for 8-9 hours or high for 4 hours.

Can substitute cream of mushroom soup for celery soup. If you're out of A1, you can use red wine.
