2 lbs. plum tomatoes
3 cloves garlic, minced
1/2 tsp. kosher salt
1/2 lb. ziti or penne
1 c. basil leaves, chopped coarsley
3 tbsp. red wine vinegar
5 tsp. olive oil
1/2 c. Fontina cheese, diced
Salt and pepper to taste
2 tbsp. roasted pine nuts, optional

Directions:
Directions:
Dice plum tomatoes. Place in large bowl. Toss with kosher salt and let stand 1 hour for juices to form. Cook pasta. To the tomatoes, add basil, vinegar, olive oil and cheese. Toss hot pasta in the sauce. Add salt and pepper, garnish with pine nuts.
