Cookie Crust

1 cup flour
¼ cup sugar
6 Tbsp butter
1 egg yolk
½ tsp vanilla

Mix flour and sugar; cut in butter until crumbly. Add yolk, vanilla, mix with fork until pastry holds together and leaves bowl clean. Chill.
 

Filling and Glaze

5-8oz packages cream cheese, softened
1¾ cups sugar
3 Tbsp flour
1 tsp vanilla
5 large eggs
2 egg yolks
¼ cup heavy cream

1 pint sour cream
2½ Tbsp sugar
¾ tsp vanilla
¼ tsp salt

Roll ⅓ of crust dough to cover bottom of 10" springform pan.

Bake at 400º for 5 minutes until browned. Cool. Grease sides of pan, fit together, and refrigerate.

Blend in sugar, flour, vanilla; beat until light and fluffy. Add eggs, then yolks, one at a time, beating each time.

Press remaining crust dough in place approximately 2" up the sides of the pan.
Stir cream into filling mixture and pour into crust.

Bake at 475º for 12 minutes. Lower the temp to 250º (open oven door) and bake 1 hour longer. Remove from oven and dust with cinnamon and freshly grated nutmeg.

Bake in 425º oven for 5 minutes. Turn off oven and open door a few minutes until it reaches below 300º. Let stay in warm oven for another hour. Cool on wire rack and refrigerate at least six hours. Mix glaze ingredients well and pour over cheesecake.
