1 CUP RICE (NOT INSTANT) UNCOOKED
2 TBS SOFRITO GREEN
2 TBS SOFRITO RED
DASH BLACK PEPPER
DASH GREEN BELL PEPPER CHOPPED FINELY
DASH RED BELL PEPPER CHOPPED FINELY
1 CAN PIGEON PEAS (GANDULES)
1/4 CAN TOMATO SAUCE
1 SAZON GOYA CON ACHIOTE
SMOKED HAM. FEW THICK SLICES CHOPPED
SALT PORK FEW PIECES CHOPPED

FRY UNCOOKED RICE UNTIL GOLDEN BROWN

IN SEPARATE PAN PUT A TBS OF OIL AND FRY SALT PORK THEN HAM.
ADD RED AND GREEN BELL PEPPER TO PAN.
ADD PIGEON PEAS, SOFRITO, PEPPER, SAZON AND TOMATO SAUCE

BRING TO BOIL THEN ADD RICE AND 1 1/2 CUPS WATER
COOK FOR 25 TO 30 MINS OR UNTIL THE WATER HAS EVAPORATED AND RICE IS FLAKY.
