Meatballs:

3 pounds ground chicken
4 garlic cloves, minced
2 eggs
1 cup panko bread crumbs
2 tablespoons cajun seasoning
1/2 cup parmesan cheese
4 to 6 tablespoons olive oil

Sauce:

6 tablespoons butter
1 cup finely chopped onion
3/4 cup finely chopped red pepper
6 tablespoons flour
3 tablespoons cajun seasoning
4 1/2 cups chicken broth
1 1/2 cups heavy cream

In a medium bowl, mix together ground chicken, garlic, egg, bread crumbs, cajun seasoning, and parmesan cheese. Mix just until well combined. Form into meatballs about 1" in diameter.

In a large skillet over medium high heat, heat oil. Add the meatballs, and brown on all sides until golden brown. Remove the meatballs from the pan, and place on plate.

Sauce:

In the same pan, melt the butter over medium low heat. Add the onions, and cook until translucent. Add the bell pepper, and cook another 2 or 3 minutes. Whisk in the flour, and cook for 2 to 3 minutes, stirring constantly. Add the chicken broth slowly, whisking constantly until it thickens a bit. Add the cajun seasoning, and mix well.

Return the meatballs to the skillet, and reduce the heat to low. Simmer for 8 to 10 minutes or until the meatballs are cooked through. Stir in the heavy cream, and turn off the heat.
