Heat muffin tins before spooning batter for perfect browning.

1 c. yellow cornmeal
1 c. all-purpose flour
3 tbsp. sugar
Pinch of salt
4 tsp. baking powder
4 tbsp. butter, melted
1 c. milk
1 egg, slightly beaten

Directions:
Directions:
Preheat oven to 400º
Grease muffin cups.

Mix together cornmeal, flour, sugar, salt and baking powder. Add melted butter, milk and egg, stirring until moistened.

Fill muffin cups ¾ full. Bake at 400º for 10-12 minutes.

Makes 12 muffins.
