Ingredients:
Ingredients:
1 large purple onion
1 large green pepper
10 peeled large tomatoes OR 2 large cans of petite diced tomatoes
1/2 bunch of cilantro (omit if you don't care of cilantro, but it's yummiest WITH cilantro.)
2 tsp. minced garlic
Approx. 1 tsp. Lime juice
Salt to taste(approx. 2 to 3 tsp)

Directions:
Directions:
Peel and dice onion and set in large bowl.
Clean, de-seed, and dice green pepper. Add it to the bowl.
Peel and dice tomatoes OR just use 2 large cans of tomatoes WITH liquid. Add it to the bowl.
Clean cilantro and pull the leaves off of the cilantro and throw away the stems. Dice and add to the bowl mixture. Stir.
Add minced garlic and lime juice and stir.
Add 2 tsp. or salt to 1 T. salt. I know it sounds like a ton of salt, but the tomatoes demand salt. Stir together and sample. Add more lime juice or salt as desired to taste.
As a side note, I usually take the mixture and put half of it into a blender and chop it up, then add it back into the bowl. It kind of makes it more of a salsa then a straight up pico de gallo. Or you can pulse blend it all to make it smoother. Your choice. ;)
