"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

4 potatoes
1 lb. sliced bacon (NOT maple or apple bacon)
1 medium to large onion
1 cube of butter
3 cans of evaporated milk
1 tsp. Garlic Salt (more or less to taste)
Approx. 3/4 to 1 tsp. black pepper

Directions:
Begin with peeling 4 potatoes and then cut them into cubes. Place them in a large pot with just enough water to cover the potatoes.
Boil the potatoes until they are soft. Do not drain.
While the potatoes are boiling, chop the raw bacon slab into roughly 1/4" slices. Toss all of the bacon into a large sauce pan and cook until crispy. Drain and set aside.
Peel and dice onion.
In a small to medium pot, sauté onions and butter together until the onions are cooked through. When almost done, add the garlic salt and black pepper.
When the potatoes are ready, add the cooked bacon, onion with spices, and all 3 cans of evaporated milk and mix.
You can eat it right away or even make it and keep it overnight for the next day.

Feel free to adjust the recipe down to make a smaller batch. It still works.
