2 1/2 cups (325 grams) all purpose flour
1 teaspoon kosher salt (we actually use bread salt)
1 Tablespoon sugar (optional)
1 cup (240 grams) frozen butter grated
4 to 8 Tablespoons ice water

Directions:
Add 1 1/2cups flour to salt and sugar (if using). Pulse 2 to 3 times until combined. (Remaining flour comes later)

Scatter butter over flour and process until dough just comes together. (you are just ensuring butter is encased in flour - don’t overwork it!) about 15 seconds.

Scrape down sides to redistribute and ad in remaining cup of flour. Pulse 4 to 5 times until remaining flour is distributed. Dough will look crumbly.again - do not overwork it.

Transfer to a medium bowl and sprinkle ice water over dough. Start with 4 Tablespoons and then add one tablespoon at a time until the dough holds together. Use spatula to press dough back onto itself. Will hold together when you pinch it.

Remove dough from bowl - work just enough to form into two balls. Form into discs, wrap with plastic wrap and return to fridge (or freeze for later) at least four hours but preferably overnight.

Before rolling out, let stand approx 20-30 mins (but not until too warm!) until workable.
