5 oz. soft butter & shortening
3/4 cup dark brown sugar
1 egg
1/3 cup molasses

Sift together:
2 cups all purpose flour
1 generous tsp. ginger
2 tsp. cinnamon
1/2 tsp. each salt & baking soda
1/2 tsp. allspice (optional) I use
1 tsp vanilla

Directions:

Beat sugar and butter/shortening well with mixer
Add egg and molasses - beat again.

Sift all dry ingredients in a small bowl.
Stir to thoroughly blend.
Stir into wet ingredients until well blended.

Cover and refrigerate overnight or for a few hours.

Preheat oven to 325'

Roll on floured surface until fairly thin.
Bake on parchment for 10 min.
The length of time you bake will determine how soft your cookies are.
