1/4 cup bacon drippings or vegetable oil,
4 to 6 cups thinly sliced raw potatoes,
1 to 2 medium onions, thinly sliced,
1 tsp. salt,
1/4 tsp black pepper (Mom doesn't add this)

Directions:

Heat bacon drippings or oil in skillet over low heat. Add potatoes, onions, salt, and pepper. Cover and cook, stirring gently about every 10-15 minutes until potatoes are tender. Remove cover and allow the potatoes to brown.

These potatoes do best in an old-fashioned cast iron skillet, they are also good unpeeled. Mom sometimes preboils the potatoes which is less cooking time. We all enjoy Armene's potatoes at HELNA every year.
