2 Tbs olive oil
1 lb chicken breast, cut into pieces
1 lb andouille sausage
1 lb firm white fish, cut into small pieces
1 large onion chopped
1 bell pepper chopped
1 C frozen okra
3 cloves garlic, minced
4 stalks celery, sliced
2 Tbs creole seasoning
6oz can tomato paste
1 can chopped tomatoes
7 C chicken broth
2 bay leaves
3 C brown rice
salt
1/2 C chopped parsley & chives

Directions:
Directions:
Place oil in large dutch over over med heat/ When hot add chicken & SAUSAGE AND COOK FOR 5 MIN.
ADD FISH, ONION, PEPPER, OKRA, GARLIC & CELERY
cook until; lightly browned. add creole, tomato paste, tomatoes, bay leaves & broth.
stir in rice. season with salt.
reduce to simmer, cover & cook until liquid is almost absorbed (30 min).
before serving remove bay leaves & stir in parsley & chives
