Cranberry Orange Bread Recipe

4 c. flour
2 c. sugar
3 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs, beaten
4 T. vegetable oil
Zest and juice of 3 oranges (1½ c.)
2 c. raw whole cranberries, rinsed (can substitute frozen)

Directions:
Directions:
Preheat oven to 350º. Grease and flour 4 small or 2 large loaf pans.

Blend dry ingredients. Mix in eggs, oil, orange zest and juice. Fold in cranberries. Pour into loaf pans.

Bake for 55 minutes for the large loaves or 35-45 for the small loaves; until a toothpick comes out clean and top begins to turn golden and spring back. Cool in pan 15 minutes, loosen edges with a knife, remove from pans, and finish cooling on a rack. Freezes well.
