3 1/2 Cups All Purpose Flour
2 Cups Sugar or Sugar Free Sugar Substitute
4 Teaspoons Baking Powder
3/4 Teaspoon Salt
8 Large Eggs, separate yolk from whites
1 Cup Milk, room temperature
2 Sticks Butter, room temperature
2 Teaspoons Vanilla
1 Teaspoon Bourbon or Bourbon Flavoring

Line and grease and flour 3 - 9" pans. Set aside . Sift together flour, salt and baking powder into large bowl. Separate 8 Eggs in large bowls. Beat 8 egg whites until soft peaks and set aside in large bowl. In mixer bowl cream butter about 2 minutes. Add sugar gradually. Mix until all done. Scrape bowl. Add vanilla and continue to mix. Slow down mixer speed to low. Mix together milk, bourbon, and vanilla in glass container. Add 1/2 flour mixture. Mix together. Add 1/2 milk mixture and continue to mix. Scrape down bowl. Put remaining flour in mixer bowl. Add remainder of milk, bourbon, vanilla. Pour into mix and mix. Add beaten egg whites to mixer bowl and fold the egg whites in the batter until folded in. Pour batter into pans evenly. (About 3 1/2 Cups per pan). Bake at 350 degrees for 30- 40 minutes or until done. Set on cooking rack after about 5 minutes in pan.

Bake at 325 degrees if Sugar Free Substitute was used.

Frosting Recipe
2 Cups Sugar or Sugar Free Sugar Substitute
1/2 Teaspoon Salt
8 Eggs Yolks Saved From Cake and add 4 Additional Separated Egg Yolks
2 Sticks Butter, room temperature
2 Cups Grinded Raisins, soaked in bourbon
2 Cups Sweetened Shredded Coconut additional if needed
2 Cups Grinded Pecans
1/2 Cup Bourbon or mix 2 teaspoons bourbon flavoring in 1/2 Cup Water

Soak raisins in bourbon and set aside. Grind raisins and pecans and set aside. Place butter, blended egg yolks, salt and sugar in double boiler. Let bottom pot filled with 2 cups of water slightly boil. Turn down to low temperature. Place top boiler with butter mixture on top and stir continually 15-30 minutes or until thickened up. Remove from heat. In separate large bowl, stir in cream mixture, coconut, grinded pecans and raisins. Let cool. Use a turntable to frost cake.
Get a cake board. Place a large dolup of frosting on cake board. Stack cake beginning with bottom layer upside down and frost. Place 2nd layer bottom up and frost. Place 1st layer face up and frost too of cake. Frost sides. Remove cake turntable to cake stand. Enjoy !!!
