1 pkg dry yeast
1 lb flour or as needed
1 cup warm water
1 large egg
3 Tbls. butter, melted
3 Tbls. sugar
1 1/4 tsp. salt
1 tsp. olive oil
1 egg, beaten
1 Tbls. milk

Directions:
Line pan with parchment paper. Place yeast in bowl, whisk in 1/2 cup flour and warm water until smooth. Let stand until mixture is foamy, 10-15 minutes. Whisk in 1 egg, melted butter, sugar and salt thoroughly into yeast mixture. Add flour (about 3 cups). With a dough hook, knead dough on low speed until soft and stick (5-6 minutes). Scrape sides if needed. Pike dough with spatula. If large amounts of dough stick to spatula, add more flour.

Transfer dough to floured board. Dough will be sticky and elastic but not to your fingers Form into a smooth round shape. Drizzle mixer bowl with olive oil and turn dough over in bowl to coat. Cover with foil. Let rise in warm place until doubled (about 2 hours).

Transfer dough to floured board and pat to flatten bubbles. Cut dough into 8 equal pieces. Form each piece into a round shape. Gently pat and stretch dough to about 1/2 inch thick. Dust buns very lightly with flour. Drape plastic wrap over baking sheet and let buns rise until doubled (about 1 hour).

Preheat oven to 375º. Beat 1 egg with milk. Very gently and lightly brush tops of buns with egg eash. Bake until lightly brown (15-17 minutes).
