4 pails tomatoes, peeled and quartered
7 medium onions, food processed
1 stalk celery, food processed
4 Tbls. dried parsley
3 bay leaves
5 lbs carrots, food processed
4 green peppers, food processed.

3/4 cup plus 2 Tbls. flour
14 Tbls. butter
3 Tbls. salt
1/2 cup sugar
2 Tbls. pepper

Directions:
Directions:
Put tomatoes, onion, celery, carrots, green peppers, parsley and bay leaves in large kettle. Boil all until everything is soft. Cool slightly, then put through food press to remove tomato seeds.

In a bowl whisk flour, butter, salt, sugar and pepper. Pour about 4 cups of tomato sauce into a large bowl, then gradually add dry ingredients to the sauce and whisk so you don't get lumps. When all mixed, add slowly to remaining tomato sauce, stirring constantly until it comes to a boil. Process in water bath for 15 minutes.
