Pastry for single crust pie:
1 1/3 cups flour
1/2 tsp. salt
1/2 cup shortening
3 1/2 Tbls. cold water

Filling:
2 cups mashed cooked pumpkin
1 can (12 oz.) evaporated milk
2 eggs, beaten
1/2 tsp. cinnamon
1/2 tsp. ginger
1/2 tsp. nutmeg
1/2 tsp. salt

Directions:
Preheat oven to 400º. Prepare pie crust by mixing together flour and salt. Cut shortening into flour. Add cold water 1 Tbls. at a time until dough is moist enough to hold (may not need it all). With floured hands, shape dough into ball. Roll dough on lightly floured board to 1/8 inch thick. Roll dough around rolling pin, then unroll it one pie pan.

In a large bowl, beat pumpkin, milk, eggs, brown sugar, cinnamon, ginger, nutmeg and salt. Mix well. Pour into crust. Bake 40 minutes until knife inserted comes out clean.
