1 tbsp vegetable oil
1 small onion finely chopped
3 large garlic cloves
1(14 1/2 oz ) can diced tomatoes with juice (I use fire roasted)
1 can chickpeas 16oz
1 medium sweet potato peeled and diced
4 cup chicken stock
1 tbsp lemon juice
Salt & pepper to taste

Directions:
Directions:
Heat oil in large saucepan over medium heat.
Add onion and cook until softened, stirring often. Add garlic, stir for 1 minute. Add tomatoes and their juices and boil slightly reduced until thick (5 minutes).
Stir in chickpeas, potato and stock.
Simmer until potatoes are tender, about 20 minutes, stirring occasionally. Stir in lemon and parsley.
