Corn tortillas
9x12 baking dish
Pam spray
Mexican shredded cheese
Shredded chicken ( I used the rotisserie chicken)
Refried beans
1/4 of an onion
Hatch green enchilada sauce
Salt
Pepper
Cilantro
Fiesta Mexican rice seasoning
Sour cream
Avacado
Salsa

Directions:
Directions:
De-bone or make shredded chicken
Spray dish with Pam
Lightly put enchilada sauce on bottom
Layer corn tortillas
Mix the onion, shredded chicken & beans in a bowl - add seasoning, stir well
Place mixture on top of tortillas
Place tortillas on top of mixture
Finish off with enchilada sauce, shredded cheese & cilantro
Bake on 350 until hot/bubbly
Serve with sour cream, salsa and avacado on side.
