2 large sweet potatoes, peeled and diced into small cubes
3 Tblsp oil, divided
1/2 of a white or yellow onion, finely diced
1 (15 oz) can of black beans drained and rinsed
1-2 Tblsp. Lime juice
1 tsp. chili powder
1/2 tsp. cumin
1/2 tsp. garlic powder
1/2 tsp. dried oregano
salt + pepper to taste
dash of cayenne, to taste
1/4 cup salsa of choice
2 large handfuls of baby spinach
Flour tortillas
shredded Mexican blend cheese

Directions:
Directions:
Preheat oven to 425. Cut sweet potatoes into cubes, I keep about half the skin and peel the other half for mine. Place on baking sheet and season with taco seasoning and desired spices. Cook for 20 minutes, take out of oven stir around and place back in oven 10-20 minutes until tender. Set aside. While sweet potatoes are cooking, saute onion in oil, add black beans, spices, salsa, and stir. Add spinach and stir until spinach is slightly wilted. Add this bean-spinach mixture to sweet potatoes.

On baking sheet, set out flour tortillas of desired size, put cheddar cheese on half of tortilla, and scoop out filling mixture and put on tortilla, and fold other half of tortilla over the mixture and press down. Bake in oven that is already at 425 until desired crispiness and cheese is melted, about 10-15 minutes. Top with cilantro lime dressing, sour cream, avocados, sauce, limes etc.
