1/3 cup olive oil
1 1/2 tsp chopped thyme
4 garlic cloves
Grated zest and juice of 1 lemon, plus one lemon cut into wedges
3 tsp kosher salt
1 1/4 tsp black pepper
10 skin on bone in chicken thighs
2 lb red potatoes cut into 1 inch pieces
2 tbs chopped parsley

1.) Preheat oven to 425.
2.)Mix well oil, salt, pepper, garlic, lemon juice and zest in a large bowl.
3.) Toss into bowl lemon wedges, potatoes, and chicken. Toss well.
4.) Dump mixture on baking sheet and spread into a single layer with chicken skin side up.
5.) Cook in oven fo 50 minutes, rotating pan once half way through. Cook until chicken registers 165.
5.5) This step is optional but I like to turn on the broiler for a few minutes at the very end and crisp up the skin.
6.) Remove from oven and add parsley

This was a pioneer woman's recipe I found and made for a quick dinner for mom and dad. Dad liked it so much he made it 3 times in a 2 week time period and immediately asked if I added it here.

Make sure you mix up the oil and seasonings real well, otherwise you might get one extra salty thigh.
