Broccoli Sunshine Salad

Ingredients for Auntie Sara’s Recipe
3 Cups Broccoli Flowerets (1/2 lb)
⅓ Cup Raisins (or dried cranberries)
¼ Cup Shredded Cheddar Cheese
4 Slices Bacon, Crisply Cooked/Crumbled
2 Tblsp Minced Red Onion


Ingredients for Chris & Jen’s Recipe
1 Lb Thick Cut Bacon, Cooked & Chopped
2 Heads Broccoli, Cut Into Bite Size Pieces
½ Cup Red Onion, Diced
½ Cup Raisins
1 Cup Pine Nuts, Toasted

Directions:
Directions:
Mix all ingredients together in a large bowl. Set aside and make dressing. (Refer to Sub Recipe below).

NOTE: You can make this recipe ahead of time, but do not add the dressing until just before you are ready to serve.

When ready to serve, toss salad mixture with dressing until evenly coated. Serve immediately.

½ Cup Mayonnaise
3 Tblsp Cidar Vinegar
1 Tblsp Sugar

1 Cup Mayonnaise
3 Tblsp White Wine Vinegar
2 Tblsp Sugar


Directions:

Mix all ingredients with a wire wisk and set aside.

When ready to serve, toss salad mixture with dressing until evenly coated. Serve immediately.

This is the one dish we (Chris & Jen) are always “Asked” (Told) to bring to family gatherings, pot lucks or any other event. It is a recipe that we always have on hand because everyone always asks for it. But somehow, we are still always asked to make it. It always comes out great and can be customized to your liking. If you don’t like onions, put less. We also sometimes soak the raisins for an hour or so to get them a little plump. We have also used red grape halves in place of raisins. The possibilities are infinite. Even Emma who is not too fond of broccoli will eat this all up. It must be the bacon.
