4 large eggs
2 c. almond flour
3/4 c. sugar substitute
2 tsp. vanilla extract
2 tsp. baking powder
1/8 tsp. salt
1/4 c. blueberries
1/3 c. raspberries

Directions:
Directions:
Place oven rack in center position. Preheat oven to 375ºF.

Grease a 12-cup muffin pan with cooking spray (you can use muffin cups, but still spray them).

In a large bowl, beat eggs until frothy. Add almond flour, sweetener, vanilla, baking powder, and salt and mix well.

Gently fold in berries. Feel each muffin cup 2/3 full.

Bake 20-25 minutes until the tops of the muffins turn light golden brown.

Let cool 10 minutes before serving. Best fresh.
