Japanese Fruit Pie Recipe

1 stick butter
1 c. sugar
2 eggs, beaten well
1/2 c. chopped pecans
1/2 c. shredded coconut
1/2 c. golden raisins
juice of 1 lemon
1 tsp. lemon zest
1 (9 inch) unbaked pie shell

Directions:
Directions:
Preheat oven to 300ºF.

Melt butter, then allow to cool.

Add sugar, eggs, nuts, coconut, raisins, lemon, and lemon zest.

Pour into an unbaked pie shell. Bake for 40 minutes. Top should be golden and center set.

Cool for 15 minutes before slicing.

This recipe is from Anita Smith, a nursing school friend of Mom's. I have seen this called Japanese Fruit Pie in other places, too, but it seems very Southern (Anita was from Mississippi)... reminiscent of a chess or vinegar pie, but also similar to pecan pie (with extra goodies!)
