1 tilapia filet (cut in two or three medium size strips)
guacamole
1 bunch cilantro
1 red radish, sliced very thin
spicy mayo
fish batter
3 tortillas
1 tsp. cooking oil
1 c. shredded cabbage
lime wedges for garnish
salsa verde

Directions:
Directions:
Dip filets in the batter and let excess drip off. Place filets in a deep fryer, for two minutes.

Meanwhile, warm tortillas with cooking oil in a pan over medium heat, flipping over several times (about two minutes).

Once fish is cooked and tortillas are warmed, place one strip in a tortilla. Top with some spicy mayo, cabbage, guacamole, cilantro, sliced radishes and lime wedge.
 

Fish Batter

1½ c. water
1 c. all-purpose flour
1½ Tb. baking powder
1 tsp. dried Mexican oregano
salt and pepper to taste

Directions:

Mix together to get a consistency that is quite thick.

Makes enough batter for 12 tacos.
 

Spicy Mayonnaise


Ingredients:  
Ingredients:  
1 c. mayonnaise
juice of 2 or 3 limes (depending on their juice content)
1 tsp. cayenne pepper
1 tsp. Mexican oregano
salt and pepper to taste

Whisk all ingredients together until you have a nice whipped consistency.

Makes enough mayo for 12 tacos.

The best fish tacos ever. Don't substitute Mediterranean/Italian oregano for the Mexican oregano (they're different plants). The recipe for mayo and batter makes enough for 12 tacos. Each tilapia filet will make 3 tacos. Serve with salsa verde.
