1 cut of brisket (10-20 lb.)*
salt & pepper
onion, sautéd
paprika
fresh rosemary
fresh thyme
fresh parsley
celery pieces
carrot, sliced
ginger snaps, crumbled
red wine


*1 lb. of raw brisket per adult

Directions:
Directions:
Preheat oven to 325ºF.

Sear meat on both sides. Season with salt and pepper. Rub with garlic pieces.

Sauté onion. Add paprika. To meat, add: rosemary, thyme, celery, parsley, carrots, ginger snaps, and red wine. Adjust quantities according to size of brisket.

Cover loosely. Cook for 3 hours. Cool and remove fat.

Purée vegetables and liquid to make a gravy.

Slice brisket against the grain. Warm for 30 minutes at 325ºF before serving.

This recipe is from Micki Schneider. Her recipe says, "serve with honeyed carrots, asparagus, red cabbage, potato latkes, or potato kugel." If you don't want to mess up the stove, you can skip searing the meat.
