3 c. cooked rice (long grain)
1 large onion, chopped
4 stalks of celery, chopped
1 poblano pepper, chopped fine
2 cloves of garlic, minced
1 Tb. olive oil
1 tsp. chili powder
1 tsp. cumin
1 c. tomatoes, chopped (can use canned)
1 tsp. salt
1/2 tsp. oregano
1/4 tsp. pepper
1/2 c. shredded cheese, Monterey Jack or Mexican blend (optional)

Directions:
Directions:
It is important to soak the rice, first. Drain and prepare.

Sauté onion, celery, green pepper, and garlic in oil. Add chili powder and cumin. Bloom spices.

When fragrant, add tomatoes, salt, pepper, and oregano.

When tomatoes are cooked through, stir in the rice.

Serve at this stage, or transfer to a baking dish and top with cheese. Bake just long enough to melt cheese.

To make "Spanish" Rice, exchange the chili pepper with either turmeric or saffron Leave out the tomatoes and the cheese.
