2 large sweet potatoes
1/3 c. packed brown sugar
1 Tb. orange juice
1/2 tsp. orange zest
1/4 tsp nutmeg, freshly grated
1 c. coconut, shredded
1/4 c. sugar
1/2 tsp. cinnamon
4 large marshmallows

Directions:
Directions:
Bake potatoes until tender, then peel and mash (can be done the day before, refrigerate mash). Stir in the sugar, orange juice, zest, and nutmeg.

Toss coconut together with sugar and cinnamon.

Press mashed potatoes around each marshmallow, then roll the balls in the coconut mixture.

Bake for 15-20 minutes. Watch carefully during the last few minutes of cooking (expanding marshmallows can cause the potato balls to burst open).

If you don't want to use coconut (Mindel!), then you can substitute crushed corn flakes, crushed ginger cookies, or finely chopped pecans, etc.
