2-3 c. cooked beets
1/2 c. sugar
1/2 Tb. cornstarch
1/2 c. vinegar
2/3 c. water
1 tsp. salt
2-3 whole cloves
2 Tb. butter

Directions:
Directions:
Mix cornstarch, sugar, and salt thoroughly in saucepan. Add vinegar and water to pot and stir over heat until thickened. Add cloves.

Add small, whole beets. Let stand for 15 minutes.

Remove cloves and add butter just before serving.

This recipe is from Micki Schneider. Harvard beets are a sweet, tangy, and buttery dish. I have left her recipe as is, but I would say allow them to simmer for approximately 30 minutes.
