2 c. basmati or short grain white rice (your preference)
1˝ c. water or chicken broth
1 bunches cilantro
1 bunches dill
1 bunches flat parsley
olive oil
cumin (optional)
salt & pepper to taste
cut-up chicken, beef, or lamb (optional)



Directions:
Directions:
Soak rice.

Finely chop herbs, or process in a blender. Dice onion, very small.

Sauté onion and half of the herbs. Add spices and bloom. Add 1˝ c. water or chicken broth. *If adding cut-up meat, add it here, then cover the pot and let cook for about 7 minutes.

Drain rice and add to broth with remaining herbs and. Cover the pot and cook for 12-15 minutes. Stir, then turn off heat and allow to steam for another 5 minutes.

My roommate when I first moved out of Crown Heights was Bukharian. She would make this plav for Shabbos. I never got her recipe, but have asked around and this is a close approximation of her recipe. You can add bits of chicken, lamb, or beef (but hers was usually plain). You can also add in some shmaltz.
