4 scoops vanilla ice cream
1 (15 oz.) can sliced peaches, drained
whipped cream/ topping
tostada shells (optional)
cinnamon to garnish


Strawberry Sauce:

3 c. fresh or frozen whole strawberries
1 c. confectioners' sugar
1/4 c. water
1 tsp. lemon juice
2 tsp. cornstarch
1 Tb. cold water
1 tsp. vanilla

Directions:
Directions:
In a saucepan, mash strawberries. Add sugar, water, and lemon juice. Cook and stir until mixture comes to a boil. Reduce heat to simmer.

Combine cornstarch with cold water. Stir until smooth. Stir into strawberry mixture. Cook and stir for 2 minutes or until thickened and bubbly.

Remove from heat. Stir in vanilla. Strain to remove pulp. Place the pan in an ice water bath to cool, stirring occasionally.

Serve vanilla ice cream in bowls or tostada shells (bowl shaped). Top with strawberry sauce, sliced peaches, whipped cream/whipped topping, and cinnamon.
