2 pounds fresh green beans, trimmed and cut into 1½-inch pieces
¼ cup olive oil
3 TBS lemon juice
3 TBS balsamic vinegar
¼ tsp salt
¼ tsp garlic powder
¼ tsp ground mustard
⅛ tsp pepper
1 red onion, large, chopped
4 cups cherry tomatoes, halved
1 cup (4 ounces) feta cheese, crumbled

Tools
6-quart stockpot with lid
whisk
6-quart pot filled with ice & water
sieve
absorbent paper towels (like Vida®)
salad tongs or kitchen gloves

Directions:
Directions:
Place beans in stockpot. Add water to cover them.

Bring pot to a boil.

Cook, covered, for 8-10 minutes (or until crisp-tender).

Drain and immediately place in ice water.

Drain and pat dry with paper towels.

In a small bowl, whisk oil, lemon juice, vinegar, salt, garlic powder, mustard and pepper.

Drizzle this liquid over the beans.

Add onion; toss to coat.

Refrigerate, covered, at least 1 hour.

Just before serving, gently stir in tomatoes and cheese.

BUDDY THE WONDER DOG

Irene's dog, Buddy, loves to pull a special trick. Literally, it is a "pulling" trick! He will pull a blanket over his body whenever he gets chilly. He has plenty of soft, fleece throws to choose from as well! Irene has throws all over her apartment so that he never has to go far to get a littler warmer.

Of course, most of the warmth in the home comes from Irene's deep love for Buddy. She adopted him when he had no home and continues to help him through an assortment of health issues. She keeps all different kinds of special treats he can eat in different "cubbyholes" in a hanging treat display that covers her bedroom door!

Buddy is no picky eater, however. No need to buy him the best organic snacks the world has to offer. He's very content with a simple MacDonald's hamburger or KFC chicken leg! Unfortunately, his stomach is not quite so accommodating as his palate, however. He has to be treated to special dog food to avoid severe pancreatitis. Fortunately, he enjoys fancy food just as much as he does homestyle!

Whether it's filet mignon or a Milk Bone® dog biscuit, Buddy is blissfully happy just so long as he can share meals with his hero, saint, and mama: sweet, sweet Irene.
