Ingredients: 3½ c. sugar 1 qt. milk 1 qt. water 12 eggs, beaten 1 tsp. salt 1 Tb. vanilla extract 3/4 c. shredded unsweetened coconut 1/2 c. (1 stick) margarine, melted 6-8 c. French bread, cubed

Directions:Preheat oven to 350º
Combine the sugar, milk, and water in a bowl and mix well. Add the eggs, salt, vanilla, coconut, and margarine. Let stand until the liquid is absorbed.
Spoon into two 9 x 12" baking pans. Bake for 35-40 minutes, until pudding rises like a soufflé and springs back when touched.
Serve with one of Noma's three special sauces. |

Ingredients: 4 whole eggs 1/4 c. bourbon whiskey, lemon juice, or amaretto 2 c. confectioners' sugar 1 c. (2 sticks) butter

Directions:Combine eggs and your choice of flavoring in a food processor. Process until well blended. Add the confectioners' sugar and butter. Process until smooth.

Notes: This recipe comes from Norma's, which was a small chain of cafés in Pensacola. Norma has since passed away and her restaurants have closed. (The other Norma's recipe I've included for you is her Poppyseed Bread with Strawberry Cream Cheese.)
This is absolutely the best bread pudding I have ever had tasted. It's unique because of the coconut and I also like it because of no raisins! At the restaurant it was fun to choose which sauce you would have. They are all delicious, but I especially like the amaretto followed by the bourbon whiskey. If I were serving this to a group, I would try to have at least two of the sauces because choosing which one you want is part of the fun.
