1 lb spaghetti noodles
1 onion, chopped
1 red bell pepper, chopped
1 lb chicken breasts
ground pepper
1 Tbsp EVOO
1/2 tsp chili powder
2 cloves minced garlic
3 Tbsp butter
3 Tbsp AP flour
2 C whole milk
1 C low-sodium chicken broth
2 1/2 C shredded cheddar

Directions:
Directions:
Preheat oven to 350º.
Boil noodles in salted water, drain & set aside.
In lg skillet over med heat, add oil, onion & bell pepper - cook until tender.
Add chicken & season with salt, pepper & chili powder. Cook until golden brown.
Remove chicken & veggies from pan, leaving any pan drippings.
In same skillet melt butter, then whisk in flour & cook about 1 minute.
Add in milk & chicken broth & cook until thickened, about 3 mins.
Combine chicken and veggies with roux, cooked noodles & about 1 1/2 cups cheddar.
Transfer to a baking dish & top with remaining cheese.
Bake until bubbly, about 45 mins.
