4 medium to large potatoes (unpeeled)
4 tablespoons olive oil (1 tablespoon for each potato)
Salt and pepper to taste
4 to 5 ripe tomatoes
1/2 red onion
4 stalks of green onions or 1 tablespoon chives
1 chicken breast, chopped into 1" pieces, seasoned with curry spices (West Indian Curry)
1 small scoop of sour cream
4 tablespoons butter (topping for the potatoes)
1/2 cup of grated cheese, double cheddar
Cilantro or parsley, for topping

Directions:

Wash potatoes thoroughly, rub 1 tablespoon olive oil on each potato.
Add salt & pepper over potatoes.
Wrap each potato in foil.
Heat over to 400º and bake for 50 to 60 minutes.

Cut up onions, chives, parsley, tomatoes, & grate your cheese.
Cook your chicken in curry (check the Chicken Curry recipe in the curry recipe page in the book).
After about an hour of baking potatoes, take out of oven and cool for 5 minutes.
Open foil and cut in halves.
Add butter inside potatoes, spread curry chicken & sprinkle grated cheese, and add hot pepper to taste, or black pepper,
Then add sour cream, chives and onions, then some more cheese.
Enjoy the best potatoes with curry chicken.
