head of iceberg or romaine lettuce, shredded
toasted slivered almonds or cashews
Mandarin oranges (optional)
scallions, chopped
toasted sesame seeds
cooked chicken breasts, chopped
clear rice stick noodles, cooked in oil (so they puff up)

Toss ingredients together with dressing.

1/2 tsp. dry mustard
2 Tb. sugar
2 Tb. soy sauce
1 Tb. sesame oil
1/4 c. olive oil
1 Tb. rice wine vinegar

Put in a jar and shake to emulsify.

This recipe was given to me by Micki Schneider. The recipe originally called for canola oil, but I have substituted olive oil since we avoid vegetable oils. In her recipe she noted that it is very important that the noodles "cook all the way or there will be pieces that will be hard as rocks in the middle."
