2 Jiffy Cornbread mixes
1 can black beans
1 can Mexi-corn
1 can Rotel
1 small red onion
1 tub sour cream
Taco seasoning
lime juice
Shredded Cheddar
Chopped cilantro
Finely diced bell peppers (red & yellow)

Directions:
Directions:
Bake cornbread according to directions, crumble and let dry. Mix beans, corn, Rotel, red onion, salt pepper, cilantro and lime juice, let sit overnight. Mix sour cream and taco seasoning. In a trifle dish layer cornbread, bean mixture, cheese and chopped peppers until full. Top with sour cream and garnish with topping of choice.
