1 1/2 tbsp fresh lemon juice
2 tsp champagne vinegar
1 tsp Dijon mustard
1/4 tsp sea salt
pinch of cracked black pepper
1/4 cup extra-virgin olive oil (cold pressed)
Agave nectar

Directions:
Directions:
In a small bowl, whisk together the lemon juice, vinegar, mustard, salt & pepper. Slowly whisk in the olive oil. If a sweeter dressing is desired whisk in agave nectar to taste. Serve immediately or store covered in the refrigerator for up to 5 days.

If you desire a balsamic vinaigrette, simply swap the champagne vinegar for balsamic vinegar and add chopped fresh herbs.

This is a really good dressing and easy to make. If you don't have a lemon, try it with lime instead.
