1 (16 oz.) can pink salmon
1 (8 oz.) pkg. cream cheese, softened
1 Tb. lemon juice
2 tsp. grated onion
1/4 to 1/2 tsp. Liquid Smoke
3 to 4 Tb. fresh parsley, snipped
1/2 to 1 c. finely chopped nuts (pecans or walnuts)

Directions:

Mix first five ingredients until creamy. Cover and chill in refrigerator for 2-3 hours.

Chop parsley and nuts. Form salmon/cheese mixture into 2 or 3 cheese logs. Rinse hands. Roll logs in the parsley/nut mixture until fully covered, including the ends.

Wrap logs in wax or parchment paper. Twist or fold in the ends. Then wrap in aluminum foil to hold it all together. Refrigerate. Best within 48 hours.

Mom used to make this in Anchorage, especially for the holidays. You can add 1 tsp. prepared horseradish to it, if you have it on hand. To make forming the log easier, you can spray your hands with a little cooking oil. Serve with crackers.
