12 oz Guittard Semisweet Chocolate Chips
12 oz Guittard White Chocolate Chips
1/2 teaspoon peppermint extract
1/2 Peppermint Candy (crushed)

Directions:
1. Preheat oven to 250 degrees. Line 9 x 13 baking sheet with foil letting it hang over the sides. Spray foil with cooking spray.

2. Pour the chocolate chips in an even layer over the foil. Place in oven for 5 minutes or until almost melted. Remove from oven, smooth with an offset spatula or knife. Place in refrigerator until cool and firm. About 20 minutes.

3. Melt white chocolate chips in a double boiler or in a metal bowl over simmering water (don’t let bottom of bowl touch the water). Remove bowl from water and stir until melted stirring in peppermint extract. Let it cool a little bit so it doesn’t melt the chocolate layer, then pour it on top spreading quickly and evenly. Sprinkle peppermint candy on top pressing a little into the white chocolate.

(If you are daring, you can use your microwave to melt the white chocolate chips. One minute, then stir. Then 30 seconds at a time, stir until melted.)

Cool until both layers are firm. Lift foil out of pan and shake off excess peppermint candy. Trim edges. Cut into two inch strips. Peel back foil and cut each strip into desired pieces. Chill in tightly covered container.

This is tricky, so make when weather is good, dry and cool. 🍀
