2 whole heads of garlic
olive oil
salt (optional)

Preheat oven to 400º

Remove papery, outer layers of garlic (leave enough that the bulb stays together).

Cut 1/4 to 1/2" off the top of the heads, to expose the individual cloves.

Put each bulb on a piece of foil, cut side up. Drizzle with olive oil; rub oil into cloves with fingers.

Bring up sides of foil and squeeze closed. Leave space between the top of the bulb and the foil. Put in a baking dish or on a cookie sheet.

Bake about 40 minutes, until cloves are soft. Season to taste.

I usually don't add any seasoning at all, but because the garlic becomes so sweet a little bit of salt can help balance the flavor. You can also add seasonings before roasting, like rosemary.
