Cast Iron Frying Pan
tenderloin steaks as required
seasoning and garnishes you choose; salt, pepper, parsley, garlic etc.
butter or olive oil

Directions:
Directions:
1. Season the steak as desired and preheat the oven to 400º.
2. Melt butter/oil in the pan and preheat to high then cook the steaks for 2 minutes per side.
3. Put the pan into the preheated oven as per this schedule:

Rare 4 minutes
Medium Rare 5-6 minutes
Medium 6-7 minutes
Medium Well 8-9 minutes
Well 10 minutes or more

4. Remove from oven and let the steaks rest 5 to 7 minutes then serve.
5. Refer to glazes and sauces for steaks in this book.
