1 lg. Chicken
2 pkgs. Chicken Gizzards
1 lg. bag frozen Baby Lima Beans
1 lg. Onion
½ bunch Scallions
2 Garlic Cloves
2 Tbsp. Fresh Parsley
Medium-Dark Roux (¼ c. Flour and ¼ c. Oil)

Directions:
Directions:
Boil chicken and gizzards until tender enough to strip meat off bones. Save broth! Make the roux by heating oil and flour together on medium heat, stirring constantly with a whisk until dark. Glaze onions, scallions and garlic until clear, about 10 minutes. Add 1-2 qts. broth. Cook frozen beans in the broth until tender. About 10 minutes before beans are done add chicken, gizzards and parsley to broth. You may need more broth at this point. Cook on low for about 15 minutes or until done.
