1 eggplant, sliced
1/4 c. vinegar
1/2 c. water
2 tsp. sugar
1/4 tsp. salt
5 garlic cloves, crushed
1/4 red pepper, finely diced

Directions:
Directions:
Slice eggplant. Sprinkle with salt and let sit for 30 minutes (not more than an hour). Rinse and pat dry.

Fry eggplant in oil.

Combine vinegar, water, sugar, salt, garlic, and red pepper in a 2 lb. container. Cover and shake to combine.

Add fried eggplant slices. Give container another shake. Put in refrigerator. Allow flavors to marinate overnight.

Serve room temperature or chilled.
