3 red bell peppers, large chop
1 red onion, large chop
1 medium eggplant, peeled & large chop
3 cloves of garlic, minced
3 Tb. olive oil
1½ tsp. salt
1/2 tsp. pepper
1 small (6 oz.) can tomato paste

Directions:
Directions:
Preheat oven to 400º

In a large bowl, mix together all ingredients. Pour onto large baking sheet (line with parchment paper) and bake for 45 minutes, stirring once while baking. Let cool slightly.

Place in food processor and pulse three or four times. Serve at room temperature.
